Outline of Final Research Achievements |
We revised the "Oita Prefecture Guide to Food Allergy Management in Schools and Kindergartens," initially developed by the Oita Prefecture Community Health Council from previous research. A survey among childcare and educational facility staff analyzed incidents and accidents related to allergy-compliant school lunches. The most common issue was "wrongly delivered meals," and the most challenging problem was "behavioral management of children with food allergies in group settings." We also conducted a cross-sectional study on fish allergies, a significant concern in school lunches. Among patients visiting a specialized hospital, the fish species most frequently causing symptoms were salmon, cod, and sea bream, while canned tuna and other processed fish were often symptom-free. No clear trends were observed in fish classification, muscle color, or causative species using Hayashi's quantification method III.

Academic Significance and Societal Importance of the Research Achievements |
食物アレルギーをもつ患者は年々増加傾向にある。10万人を超える患者の多くは乳幼児期での発症であり、保育・教育施設における関係者の支援が重要となる時期である。今回、集団生活で最も健康被害のリスクが高い対応給食の提供過程でのインシデント・アクシデント分析を行った。本結果をもとに、国内の8割以上の保育・教育施設が行う対応給食がリスク管理の問題解決に役立つものと思われた。また、これまで調査がなかった魚アレルギーの実態では、魚類の色や系統による頻度の差に根拠がなかった。よって、問診や医療機関による診断を基本とすることが成長期の最小限の食物除去につながる意義ある結果と思われた。
